Strawberry Yogurt Bars

With only 3 ingredients

The strawberry season just started and, like every year, I feel inspired to look for new and exciting ways of what to do with the delicious berries. This week I wanted something quick and uncomplicated. So I came up with a strawberry recipe with only 3 ingredients and 10 minutes max of preparation.

If you are one of the people who like to snack on something sweet in the afternoons and if you love ice cream in the summer, then this recipe is for you. It’s a guilt-free dessert as the “icecream” is made from natural yoghurt sweetened with honey (or maple syrup) and topped with strawberry slices. Easy, right? In the afternoon you simply take a piece of it from the freezer, let it thaw for 5 minutes and then scoop up your healthier ice cream with pleasure.

Strawberries contain numerous secondary plant substances that have an anti-inflammatory effect. The anthocyanins that give strawberries their beautiful red color are their most important bioactive substance. Their content increases as the strawberries ripen, so it is important to use ripe fruit. Anthocyanins serve the plant, among other things, as sun protection. They absorb UV light, so the plant can grow in full sun without any damage. In the human body, anthocyanins have a cell-protecting effect. They deactivate free radicals and thus counteract inflammation and cell destruction. Anthocyanins not only have a preventive effect, but also have a healing effect on chronic inflammation.

Strawberry Yogurt Bars

Cooling time 5 hours

Ingredients

  • 250 g Greek style natural yoghurt optionally vegan
  • 2.5 tbsp light honey alternatively: maple syrup
  • 100 g strawberries stems removed and thinly sliced

Instructions

  • Mix yoghurt and honey in a bowl.
  • Line a tupperware dish or a small baking sheet with parchment paper and fill in the yoghurt.
  • Spread the strawberry slices evenly over the surface.
  • Freeze for 5 hours. Then cut into rectangles and serve.
